My Take on the Tastiest Turkey Sandwich

Eat more turkey! Especially if you scored a gobbler this season.

Turkey Sandwich

Everyone's favorite fried chicken sandwich always hits the spot (except on Sundays), but did you know you can make your own using your turkey tag? I recently shot my first turkey and during my research into all the ways to prepare wild turkey for the dinner table, I came across this recipe. I knew I had to give it a shot! Wild turkey meat is best slow cooked or fried because of it's gamey flavor, which makes it the perfect meat for sandwiches.

Ingredients:
1 turkey breast
2 cups pickle juice
1 cup flour
1 tsp. paprika
1 tsp. cayenne pepper
1 tsp. black pepper
2 tsp. salt
1 tsp. sugar (confectioners or granulated)
1 tsp. baking soda
2 eggs
1 cup milk
3 cups peanut or canola oil
Hamburger buns
Pickle slices

Step 1:
Pound out your turkey breast until it is 1/2" thick throughout. Then cut it into sandwich sized pieces. Brine the meat in pickle juice overnight in the refrigerator to tenderize the meat, add flavor and keep it moist during frying. 

Step 2:
Remove the turkey slices from the brine and pat them dry with a paper towel. Then, whisk the eggs and milk together in a bowl. Combine the flour, spices, sugar and baking soda in another bowl. Dip the turkey in the egg mixture, and then coat it in the flour mixture.

Step 3:
Once all of your slices are prepared, place them in hot oil, frying them for 3-4 minutes on each side until they are golden brown. Lay them on a paper towel covered plate to get rid of excess oil.

Step 4:
Once your turkey breasts are cool enough to handle, place them on a bun with dill pickle slices and enjoy! I paired my sandwich with oven roasted french fries.
